In its old 17th-century cellars, the \u003cstrong\u003eDauvissat family\u003c\/strong\u003e produces Chablis wines that have won over many enthusiasts around the world.\u003c\/p\u003e\n\u003cp\u003eRené, then Vincent from 1976, and now Gislain and Étiennette since 2013, are a family dedicated to their terroirs and great wines. In a spirit of continuity, the estate has nevertheless made substantial progress in vineyard management under Vincent’s guidance. Without being certified, \u003cstrong\u003eit has worked organically and biodynamically since 2002\u003c\/strong\u003e: “a personal approach; I’m not looking for an official label,” explains Vincent Dauvissat, who knows that everything happens in the vineyard.\u003c\/p\u003e\n\u003cp\u003eIn the cellar, there is no magic formula: aging in barrels (10% new oak), no batonnage, and very low sulfur doses produce a highly convincing result.
