Every year, 57,000 bottles leave the estate. Production quantities are therefore limited, making these cuvées rare and highly sought-after. Covering an area of 7.5 hectares, the estate comprises 47 plots, located mainly in the \u003cstrong\u003eCôte des Blancs\u003c\/strong\u003e. Since Anselme took over its management, a few changes have taken place, particularly regarding yields and viticultural methods. An environmentalist at heart, he decided to favor low yields. He adopted \u003cstrong\u003eorganic viticulture\u003c\/strong\u003e without seeking any certification.
