Chablis Premier Cru La Forest - Vincent Dauvissat-Camus 2018 Magnum
The estate
From Petit-Chablis to the Grand Cru Les Clos, the Dauvissat family has elevated its mastery of Chardonnay to an art form. In its old 17th-century cellars, the Dauvissat family produces Chablis wines that have won over many enthusiasts around the world.
René, then Vincent from 1976, and now Gislain and Étiennette since 2013, make up a family devoted to its terroirs and great wines. In a spirit of continuity, however, the estate has made substantial progress in vineyard management, driven by Vincent. Though not certified, it has been practicing organic and biodynamic farming since 2002: "a personal approach; I’m not seeking an official label," explains Vincent Dauvissat, who knows that everything happens in the vineyard.
In the cellar, there’s no magic formula: wines are aged in barrels (10% new oak), with no bâtonnage and very low levels of sulfur, producing highly convincing results. Unfortunately, most of the estate’s wines will be drunk far too young, and it is no longer possible to buy them from the estate.
