Saint-Émilion Grand Cru - Château Canon 2007

The estate

The velvety and silky style of Château Canon is explained by the magic that occurs between soils and grape varieties. The limestone with asterisks gives the wines freshness, finesse, and elegance. They show a remarkable ability to age. Thus, Château Canon is a wine of patience that, over time, reveals its noble qualities.

Château Canon stands as an icon in its appellation, particularly with a plot located in the village of Saint-Emilion. The 34 hectares of vines grow on a limestone base veined with clay, suitable for cultivating merlot. The cabernet franc has the best-exposed plots to reach its full maturity. The harvest is, of course, done by hand.

In terms of winemaking, each plot is placed in a tank separately, by gravity, to preserve the identity and uniqueness of each one. The aging then takes place in French oak barrels for a period of 18 to 20 months depending on the vintage. Afterward, a racking by siphoning is performed, a tedious operation that involves separating the wine from its lees while considering the specificity of each barrel and without using a pump. Château Canon is intended for aging over several decades.
