Côtes du Jura 'Professor's Cuvée Under the Rock' - Francois Rousset-Martin 2018 Magnum

The estate

Originally from the Jura, François Rousset-Martin grew up in Beaune, where a true passion for wine and vineyards was born in him. After studying oenology and biology, he took over the family estate in 2007, based in Nevy-sur-Seille, a few kilometers south of Château-Chalon. L'The 10-hectare family estate, whose plots are scattered around the famous appellation, gradually left the cooperative, leading to fully independent winemaking in 2018. Considered a "virtuoso of Savagnin," François Rousset-Martin practices biodynamic winemaking and produces white wines (Chardonnay, Savagnin), reds (Poulsard), and orange wines (short maceration), all under the Côtes du Jura appellation, which enjoy an excellent reputation among natural wine enthusiasts.

Size: 150cl (Magnum)

 Country: France

Region: Jura

Farming: biodynamic 🌱

Grape variety: 100% Savagnin

Tasting: fermentation and aging take place in a Burgundy barrel on the lees for 15 months. The wine is neither filtered nor fined. On the nose, it is exotic with an oxidative note. The palate is focused, with lovely citrus, peach, and ripe, candied fruit bitterness. A lovely acidity emerges on the finish.
