Saint-Émilion Grand Cru - Château Canon La Gaffelière - 2015

The domain

Located at the foot of the hill south of the medieval village of Saint-Emilion, the terroir of Chateau Canon La Gaffeliere is composed of clay-limestone and clay-sandy soils, very filtering, particularly receptive to heat.

Due to the nature of the soils, the grape varieties have an atypical structure with regard to the appellation, characterized by a perfect balance between Merlot and Cabernet. On this terroir, where maturation takes place very early, the Cabernets flourish remarkably, bringing to the opulence of the Merlot a power and aromatic complexity that underpin the natural elegance and finesse of the wines of Canon La Gaffelière.

Extending parcel management, the host structure of the vat room offers the possibility of vinifying perfectly homogeneous batches. The different phases of vinification take place slowly, without excessive rise in temperature, thus expressing the best of the harvest. Aging, carried out on fine lees, brings out the intrinsic qualities of the wine by offering each entity the benefit of individualized treatment. Handling and interventions are drastically reduced, adapted to the typicality of each vintage.

Tasting: aromas of red fruits, black fruits and a nice minerality. On the palate, it is beautifully balanced, with tasty touches of blackberries combined with graphite. The wine shows freshness on the palate, with superb tension and an extremely persistent finish.
