Châteauneuf-du-Pape - Celestins Reserve - Henri Bonneau 2015

The domain

The Henri Bonneau estate located in Chateauneuf du Pape in the Northern Rhone Valley is one of the mythical estates of the Chateauneuf du Pape appellation. It extends over 6 ha mainly composed of Grenache (85%) but also Mourvèdre, Syrah, Vaccrèse and Counoise planted on the prestigious Crau plateau. Certainly one of the finest pebble terroirs in Châteauneuf du Pape. Henri Bonneau, who died in 2016, was the heir to the 12th generation of winegrowers in Chateauneuf du Pape. The specificity of the wines produced here is that they come from old vines, very low yields (10 to 15 hl per ha) and grapes harvested at high maturity. Fermentation takes place in concrete vats, without temperature control, without sulfur and can sometimes last almost a year. Then, the wines pass in old Burgundian barrels of more than 10 years, which does not mark the wine. The cellar dates from the 17th century, and the barrels are covered in dust and moss, unlike modern methods. The aging of red wines and white wines is very specific because it will last between 5 and 8 years until bottling.
