The Puligny-Montrachet Premier Cru "Clavoillon" from Domaine Leflaive is a biodynamic white wine aged in wood, made from Chardonnay by Domaine Leflaive in the AOC Puligny-Montrachet 1er Cru/Côte-d'Or in Burgundy (France).
A great ambassador of Puligny-Montrachet, Domaine Leflaive has been able to make its white wines resonate like no other. Founded in 1917 by a naval engineer who inherited some vineyards in this Burgundy region, this estate has been managed since his death by his four sons, according to the same quality standards. In 1990, they began to engage in biodynamics and are now a reference in this field in France.
Domaine Leflaive comes from a 4-hectare plot where the vines are on average 45 years old. These are old vines planted on clay-limestone soils and cultivated using organic and biodynamic techniques. The yield of the vine is limited, and the harvest is done manually at the optimal time of ripeness.
In the cellar, the grapes from the estate are pressed slowly and gently, and the resulting must is spontaneously fermented with indigenous yeasts. The wine is then aged in tanks for 12 months. Finally, it is clarified through homeopathic treatments and lightly filtered.
