The domain
Made from 100% Pinot Noir, this cuvée comes from a micro plot of approximately 0.74 hectares facing south-east. These vines were used a few years ago for the "Inflorescence" cuvée. The density per hectare is 8000 feet there. Cédric vinifies these wines in Burgundy style and performs malolactic fermentation for more amplitude in the wines.
The nose evokes an incredible minerality, notes of dried leaves, lime blossom, verbena and a ripe, greedy, juicy fruit. Here the vinous style blends with a deep verticality. The palate is harmonious, precise and chiselled. A delicate, elegant Champagne of great gastronomy!
